Ingredients
  

For the Meatloaf:

  • 1.5 lbs ground beef 80/20
  • 1 small onion finely diced
  • 2 cloves garlic minced
  • 1/2 cup panko breadcrumbs
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons ketchup plus more for topping
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried parsley
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

For Creamy Mashed Potatoes:

  • 2 lbs russet potatoes peeled and quartered
  • 1/2 cup warm milk
  • 1/4 cup unsalted butter
  • Salt and pepper to taste

For Roasted Green Beans with Garlic:

  • 1 lb fresh green beans trimmed
  • 2 tablespoons olive oil
  • 2 cloves garlic minced
  • Salt and pepper to taste

For Sautéed Mushrooms:

  • 8 oz cremini mushrooms sliced
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 clove garlic minced
  • 1 tablespoon fresh parsley chopped
  • Salt and pepper to taste

Instructions
 

Part 1: The Meatloaf

  • Preheat oven to 350°F (175°C) and grease a loaf pan or prepare a baking sheet.
  • Combine ground beef, onion, garlic, breadcrumbs, milk, egg, ketchup, Worcestershire sauce, parsley, salt, and pepper in a large bowl, mixing until just combined.
  • Form the mixture into a loaf, place it in the pan, and spread a thin layer of extra ketchup on top.
  • Bake for 50-60 minutes until the internal temperature reaches 160°F (71°C), then let it rest for 10 minutes before slicing.

Part 2: The Sides

  • Creamy Mashed Potatoes: Boil peeled and quartered potatoes in salted water until fork-tender, about 15-20 minutes.
  • Drain potatoes, return to the pot to dry, then mash with warm milk, butter, salt, and pepper until smooth and creamy.
  • Roasted Green Beans with Garlic: Toss trimmed green beans with olive oil, minced garlic, salt, and pepper.
  • Roast green beans in the oven with the meatloaf for the last 20-25 minutes, until tender-crisp.
  • Quick Sautéed Mushrooms: Heat olive oil and butter in a skillet, add sliced mushrooms, and cook without stirring for the first 3-4 minutes to brown.
  • Stir and continue cooking mushrooms until tender, then add garlic and cook for another minute before stirring in parsley and seasoning.
  • Plating: Slice meatloaf, serve with mashed potatoes, roasted green beans, and sautéed mushrooms.

Notes

Resting the meatloaf after baking helps it retain its juices and makes for easier slicing. Don't overmix the meatloaf mixture to ensure a tender texture. Adjust seasonings to taste for all components of the meal.
