  • 1 head broccoli cut into small florets
  • 2 medium carrots thinly sliced
  • 1 red bell pepper sliced
  • 1 cup snap peas

Sauce

  • 2 tablespoons soy sauce or tamari for gluten-free
  • 1 tablespoon rice vinegar
  • 1 teaspoon honey
  • 0.5 teaspoon red pepper flakes
  • 0.25 cup chicken or vegetable broth
  • 1 tablespoon cornstarch mixed with 2 tablespoons cold water to make a slurry

Cooking Instructions

  • Heat oil in a large skillet or wok over medium-high heat. Brown the ground turkey, breaking it up, and drain any fat.
  • Push turkey to one side; add chopped onion, minced garlic, and grated ginger. Sauté for 2-3 minutes until fragrant.
  • Stir in the broccoli, carrots, and red bell pepper with the turkey mixture. Stir-fry for 5-7 minutes until tender-crisp, then add snap peas for 2 more minutes.
  • Whisk together soy sauce, rice vinegar, honey, red pepper flakes, and broth. Pour this sauce over the turkey and vegetables.
  • Bring the sauce to a simmer, then stir in the cornstarch slurry. Cook for 1-2 minutes until the sauce thickens.
  • Serve immediately over rice or noodles. Garnish with sesame seeds and chopped green onions as desired.

Notes

For a spicier kick, increase the amount of red pepper flakes or add a dash of sriracha to the sauce. This dish is highly customizable; feel free to swap in other vegetables like bell peppers, mushrooms, or cabbage.
