  • 1 pound lean ground beef
  • 1 medium yellow onion chopped
  • 2-3 cloves garlic minced
  • 1 can crushed tomatoes 28 ounce
  • 4 cups beef broth
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 ounces rotini pasta

  • Heat olive oil in a large pot over medium-high heat. Add ground beef and cook until browned, then drain excess grease.
  • Add chopped onion and cook until softened. Stir in minced garlic and cook for another minute.
  • Pour in crushed tomatoes and beef broth. Stir in Italian seasoning, salt, and pepper, then bring to a gentle boil.
  • Add rotini pasta, submerge it in the liquid, reduce heat to medium-low, cover, and simmer for 10-12 minutes until pasta is al dente and liquid is absorbed, stirring occasionally.
  • Remove the pot from heat and stir in shredded cheddar cheese until melted.
  • Ladle into bowls, garnish with fresh parsley or basil if desired, and serve.

Notes

For extra flavor, you can add a bay leaf to the pot with the broth and seasoning, removing it before serving. Feel free to adjust the amount of Italian seasoning and pepper to your taste. This recipe makes great leftovers!
