  • 1 pound lean ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 1 can (10.75 ounce) condensed cream of mushroom soup
  • 1 ½ cups chicken broth or vegetable broth
  • 1 teaspoon dried Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 2 cups dried elbow macaroni or other small pasta
  • 1 cup frozen mixed vegetables peas, carrots, corn

For Topping

  • ½ cup shredded cheddar cheese optional
  • Fresh parsley chopped, for garnish (optional)

Cooking Steps

  • Heat olive oil in a large pot over medium-high heat, then brown the ground turkey, breaking it apart and draining excess grease.
  • Add chopped onion and cook until softened, then stir in minced garlic and cook for another minute until fragrant.
  • Stir in diced tomatoes, cream of mushroom soup, chicken broth, Italian seasoning, salt, and pepper, bringing the mixture to a gentle simmer.
  • Add dried elbow macaroni and frozen mixed vegetables to the pot, stirring well to ensure the pasta is submerged.
  • Reduce heat to medium-low, cover, and simmer for 12-15 minutes until pasta is tender and liquid is absorbed, stirring occasionally.
  • Remove from heat, optionally sprinkle with cheddar cheese and cover to melt, then garnish with fresh parsley and serve hot.

Notes

Feel free to use any small pasta shape you have on hand. For a creamier sauce, add a splash of milk or cream at the end. Adjust seasonings to taste and add a pinch of red pepper flakes for a little heat.
