  • 1 lb breakfast sausage
  • 1 bell pepper any color
  • 1 small onion
  • 8 large eggs
  • 1 cup milk whole recommended
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 cups shredded cheese cheddar or Monterey Jack blend
  • 6 slices stale bread crusts removed and cubed
  • fresh spinach Optional: a handful of

Preparation

  • Cook sausage in a large skillet until browned, then drain grease. Add diced bell pepper and onion, sautéing until softened (5-7 minutes). If using, stir in spinach until wilted, then drain and set aside.
  • Lightly grease a 9x13 inch baking dish and scatter cubed bread pieces evenly over the bottom.
  • Spoon the cooked sausage and vegetable mixture over the bread, then sprinkle one cup of shredded cheese evenly over the mixture.
  • In a large bowl, whisk together eggs, milk, salt, and pepper until well combined.
  • Carefully pour the egg mixture over the ingredients in the baking dish, ensuring even distribution and pressing gently to help the bread soak it up. Sprinkle the remaining cup of cheese on top.
  • Cover the dish with plastic wrap and refrigerate for at least 30 minutes, or preferably overnight (up to 24 hours).

Baking

  • Preheat oven to 375°F (190°C) and remove the casserole from the refrigerator while it preheats, discarding the plastic wrap.
  • Bake for 45-55 minutes, or until the casserole is puffed, golden brown, and set in the center. An inserted knife should come out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For best results, prepare the casserole the night before and let it chill overnight. This allows the bread to fully absorb the egg mixture, resulting in a more cohesive and flavorful bake.
