  • 1 lb cooked breakfast sausage drained and crumbled
  • 6 slices stale bread torn into bite-sized pieces
  • 1 cup shredded cheddar cheese plus more for topping
  • 1/2 cup chopped onion sautéed
  • 1/2 cup chopped bell pepper sautéed

Egg Mixture

  • 8 large eggs
  • 1 1/2 cups whole milk
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/4 tsp garlic powder
  • 1/4 tsp dry mustard Optional

Preparation

  • Grease a 9x13 inch baking dish and spread the torn bread pieces evenly on the bottom.
  • Scatter the cooked sausage, sautéed onion, and bell pepper over the bread layer.

Assemble Casserole

  • In a large bowl, whisk eggs, milk, salt, pepper, garlic powder, and optional dry mustard until well combined.
  • Pour the egg mixture over the ingredients in the baking dish and sprinkle with cheddar cheese.

Chill and Bake

  • Cover and refrigerate for at least 30 minutes, or preferably overnight.
  • Preheat oven to 350°F (175°C), then bake uncovered for 45-60 minutes until set and golden brown.

Serve

  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For best results, chill the casserole overnight to allow the flavors to meld and the bread to fully absorb the egg mixture. This casserole can be made ahead, making it ideal for entertaining or busy mornings.
