  • 8-10 slices Bread day-old preferred (white, whole wheat, brioche, or challah all work well)
  • 8 large Eggs
  • 2 cups Milk whole milk recommended
  • 1 lb Cooked Breakfast Meat cooked sausage, crumbled
  • 2 cups Shredded Cheese sharp cheddar cheese
  • 1 tbsp Butter for greasing the dish

Optional Veggies & Seasonings

  • 1/2 cup Yellow Onion diced
  • 1/2 cup Green Bell Pepper diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 1/2 tsp Dry Mustard

Instructions
 

Preparation

  • Grease a 9x13 inch baking dish with butter.
  • Tear or cut bread into 1-inch cubes and spread half evenly over the dish.
  • Sprinkle half of the cooked sausage, onion, bell pepper, and cheddar cheese over the bread.
  • Add the remaining bread cubes, followed by the rest of the sausage, onion, bell pepper, and cheddar cheese.
  • In a large bowl, whisk eggs, milk, salt, pepper, and dry mustard until well combined.
  • Pour the egg mixture evenly over the casserole, ensuring all bread is soaked, and gently press down.
  • Cover the dish tightly with plastic wrap and a piece of parchment paper directly on top. Refrigerate for at least 8 hours or overnight.

Baking

  • Preheat oven to 375°F (190°C) in the morning.
  • Remove casserole from refrigerator and let sit at room temperature for 15-20 minutes.
  • Remove plastic wrap and parchment paper, then bake for 45-55 minutes until golden brown and puffed.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

For best results, allow the casserole to chill overnight to ensure the bread fully absorbs the egg mixture. You can customize the vegetables to your liking or omit them entirely. If you prefer a crispier top, you can uncover the casserole for the last 10-15 minutes of baking.
