  • 1 cup vegetable broth
  • 1 tablespoon olive oil
  • 1/4 cup chopped mushrooms
  • 1/4 cup chopped spinach
  • 1 large egg
  • Salt and black pepper to taste
  • Pinch red pepper flakes optional
  • 1 tablespoon shredded cheese cheddar or Parmesan recommended

  • Combine oats and broth in a saucepan, bring to a simmer, then cook on low for 5-7 minutes until absorbed and creamy.
  • While oats cook, heat olive oil in a non-stick pan, sauté mushrooms for 2-3 minutes, then add spinach and cook until wilted.
  • Push vegetables aside, crack the egg into the pan, and cook to your desired doneness, seasoning with salt and pepper.
  • Transfer cooked oats to a bowl, then top with the sautéed vegetables and the cooked egg.
  • Garnish with shredded cheese and red pepper flakes if desired, and serve immediately.

Notes

For extra flavor, you can add a dash of soy sauce or hot sauce to the finished dish. Adjust the amount of red pepper flakes to your spice preference.
