  • 1 Yellow onion finely diced
  • 3 Garlic cloves minced
  • 1 lb Ground turkey lean or regular
  • 1 cup Heavy cream
  • 4 oz Cream cheese softened
  • 2 tbsp Unsalted butter
  • 1/4 cup Parmesan cheese shredded, optional
  • 1 tsp Salt or to taste
  • 1/2 tsp Black pepper freshly ground, or to taste
  • 1 tsp Smoked paprika
  • 1/4 tsp Cayenne pepper optional
  • 2 tbsp Fresh chives chopped, for garnish and freshness

  • Melt butter in a large skillet and brown the ground turkey, breaking it apart as it cooks. Once thoroughly browned, drain any excess fat from the skillet.
  • Add the finely diced yellow onion to the skillet, sautéing until softened and translucent. Stir in the minced garlic and smoked paprika, cooking for one minute until fragrant.
  • Stir in the corn kernels, heavy cream, and softened cream cheese. Reduce heat to medium-low and simmer gently for 5-8 minutes, stirring frequently until the cream cheese melts and the sauce thickens.
  • Season the mixture with salt and black pepper, adjusting to taste. If using, stir in the shredded Parmesan cheese until melted, and add cayenne pepper for a little kick.
  • Remove the skillet from heat and garnish generously with chopped fresh chives before serving hot.

Notes

For best results, use fresh corn when in season. Adjust the cayenne pepper to your preferred level of heat. This dish is great on its own or served with a side of crusty bread.
