  • 2 lbs Boneless, Skinless Chicken Breasts or Thighs cut into 1-inch pieces
  • 4 cups Chicken Broth
  • 1 can Cream of Chicken Soup 10.5 oz
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • 1 tbsp Dried Parsley
  • Salt To taste
  • Black Pepper To taste

Dumplings

  • 1 can Refrigerated Biscuit Dough 16.3 oz, 8 count large flaky biscuits
  • 1/4 cup Milk whole or 2% (optional, for thinning sauce)

Instructions
 

Cooking Steps

  • Place the cut chicken pieces at the bottom of the slow cooker.
  • Whisk together chicken broth, cream of chicken soup, onion powder, garlic powder, dried parsley, salt, and pepper until smooth in a medium bowl.
  • Pour the mixture over the chicken in the slow cooker and cook on LOW for 6-8 hours or HIGH for 3-4 hours until tender.
  • Shred the chicken and return it to the slow cooker, stirring to combine with the broth.
  • Cut each biscuit from the can of dough into 4-6 smaller pieces.
  • Drop the biscuit pieces onto the hot chicken mixture in the slow cooker without stirring.
  • Cover and cook on HIGH for another 30-60 minutes until dumplings are puffed and cooked through.
  • Optionally, mix 1/4 cup milk with 1 tablespoon cornstarch and stir into the sauce during the last 15 minutes if it's too thin.
  • Ladle hot into bowls and serve.

Notes

For extra flavor, consider browning the chicken pieces before adding them to the slow cooker. You can also add some mixed vegetables like peas and carrots during the last hour of cooking for a more complete meal. Adjust seasonings to your personal preference.
