  • 3-4 pound chuck roast or bottom round roast
  • 1 large yellow onion roughly chopped
  • 1 pound carrots peeled and cut into 1-2 inch chunks
  • 1.5-2 pounds potatoes (Yukon Gold or red potatoes) or sweet potatoes peeled and cut into large chunks
  • 2 cups compliant beef broth (no added sugars/non-compliant ingredients)
  • 4-6 cloves garlic minced or roughly chopped
  • 2-3 sprigs fresh rosemary or 1 tablespoon dried
  • 2-3 sprigs fresh thyme or 1 teaspoon dried
  • 2 dried bay leaves
  • 1-2 tablespoons olive oil or avocado oil for searing
  • Salt to taste
  • Black pepper to taste
  • 1-2 tablespoons arrowroot powder mixed with a little water (for thickening)

Instructions
 

Preparation

  • Pat the beef roast dry with paper towels and season generously with salt and black pepper.
  • Heat olive oil in a large skillet over medium-high heat and sear the beef roast on all sides until nicely browned.

Slow Cooking

  • Place chopped onion, carrots, and potatoes at the bottom of your slow cooker. Sprinkle minced garlic over the vegetables.
  • Add fresh rosemary, thyme sprigs, and bay leaves among the vegetables.
  • Carefully transfer the seared beef roast on top of the vegetables in the slow cooker.
  • Pour the compliant beef broth around the roast and vegetables, then cover and cook on low for 6-8 hours or high for 3-4 hours, until fork-tender.

Finishing Touches

  • Remove bay leaves and herb sprigs. Shred the roast with two forks and return it to the pot to mix with vegetables and juices.
  • For a thicker gravy, whisk arrowroot powder with cold water and stir into the hot liquid during the last 30 minutes of cooking.
  • Taste and adjust seasoning with salt and pepper, then serve hot.
