  • ¼ cup milk

  • ¼ teaspoon black pepper
  • ½ cup shredded cheddar cheese
  • 2 tablespoons chopped fresh spinach

Instructions
 

Preparation

  • Preheat oven to 350°F (175°C) and lightly spray a 12-cup muffin tin with cooking spray.
  • In a large bowl, whisk together eggs, milk, salt, and pepper until well combined; then stir in shredded cheddar cheese and fresh spinach.
  • Pour the egg mixture evenly into the prepared muffin cups, filling each about ¾ full.

Cooking

  • Bake for 18-22 minutes, or until the egg muffins are set and lightly golden brown around the edges.
  • Let cool slightly before removing from the muffin tin to serve.

Notes

For extra flavor, consider adding a pinch of garlic powder or onion powder to the egg mixture. These muffins can be stored in an airtight container in the refrigerator for up to 3 days and reheated in the microwave or oven.
