  • 1 pound lean ground beef (80/20 or leaner)
  • 1 medium yellow onion chopped
  • 2 cloves garlic minced
  • 1 can (14.5 ounce) diced tomatoes undrained
  • 1 cup low-sodium beef broth
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon salt (adjust to taste)
  • 1/4 teaspoon black pepper (freshly ground recommended)
  • 1 cup frozen mixed vegetables (peas, carrots, corn, green beans)

For Thickening (optional)

  • 1 tablespoon cornstarch (optional, for thickening)
  • 2 tablespoons cold water (if using cornstarch)

Cooking Steps

  • Heat olive oil in a large skillet and brown the ground beef, breaking it apart, then drain excess grease.
  • Reduce heat to medium, add chopped onion and cook until soft, then stir in minced garlic until fragrant.
  • Pour in diced tomatoes, beef broth, Worcestershire sauce, Italian seasoning, salt, and pepper, stirring well.
  • Bring the mixture to a gentle simmer, then stir in the frozen mixed vegetables.
  • Optionally, whisk cornstarch and cold water to form a slurry, then stir into the simmering mixture and cook for 2-3 minutes until thickened.
  • Remove from heat and let rest for a few minutes before serving.

Notes

Serve this hearty skillet meal on its own or with a side of crusty bread. You can easily adapt this recipe by adding your favorite vegetables or a pinch of red pepper flakes for a bit of heat.
