Heavenly Berry Chia Parfait

This delightful parfait combines the goodness of mixed berries, creamy yogurt, and omega-rich chia seeds for a healthy and satisfying treat. Perfect for breakfast or a light dessert, it's easy to prepare and can be made ahead of time.

Ingredients
  

Main Ingredients

  • 1 cup mixed berries fresh or frozen, e.g., strawberries, blueberries, raspberries
  • 1/2 cup unsweetened Greek yogurt or plant-based yogurt for vegan
  • 2 tablespoons chia seeds
  • 1 tablespoon maple syrup or honey optional, adjust to taste
  • 1/4 teaspoon vanilla extract

Topping & Garnish

  • 2 tablespoons chopped almonds or granola for topping
  • Fresh mint leaves for garnish (optional)

Instructions
 

Preparation

  • In a small bowl, gently mash half of the mixed berries, leaving some whole for texture.
  • In a separate bowl, combine Greek yogurt, chia seeds, maple syrup (if using), and vanilla extract; stir well to ensure even distribution of chia seeds.

Assembly

  • Layer ingredients in a glass or jar, starting with mashed berries followed by the yogurt-chia mixture.
  • Continue layering until all ingredients are used, finishing with the yogurt-chia mixture on top.

Setting & Serving

  • Cover and refrigerate for at least 2 hours, or preferably overnight, to allow chia seeds to swell and the parfait to set.
  • Before serving, top with remaining fresh berries, chopped almonds or granola, and garnish with a mint leaf if desired.

Notes

For a thicker parfait, use less liquid in the yogurt mixture. You can also experiment with different types of berries or add a pinch of cinnamon for extra flavor.
