Ingredients
  

For the Fries

  • 1 bag frozen French fries (32 oz) shoestring or thin-cut work best
  • 3 russet potatoes large, cut into fries
  • 1 tablespoon olive oil (if using fresh potatoes)

For the Nacho Cheese Sauce

  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • 1 cup milk (whole or 2% for creaminess)
  • 4 oz Velveeta cheese cubed
  • 2 oz sharp cheddar cheese shredded
  • 0.5 teaspoon chili powder
  • 0.25 teaspoon ground cumin
  • 0.25 teaspoon garlic powder
  • cayenne pepper Pinch (optional, for extra kick)
  • Salt to taste

For the Secret Seasoning (The Key!)

  • 1 tablespoon chili powder
  • 1 teaspoon ground cumin
  • 0.5 teaspoon smoked paprika
  • 0.5 teaspoon onion powder
  • 0.5 teaspoon garlic powder
  • 0.25 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper (adjust to your spice preference)
  • 0.25 teaspoon white pepper
  • 0.5 teaspoon salt

Instructions
 

Prepare the Fries

  • Cook frozen fries according to package directions, or preheat oven to 425°F (220°C) for fresh potatoes.
  • Toss fresh cut potatoes with olive oil, salt, and pepper, then bake on a baking sheet for 25-35 minutes, flipping halfway, until crispy and golden.

Make the Nacho Cheese Sauce

  • Melt butter in a saucepan over medium heat, then whisk in flour and cook for 1 minute to form a roux.
  • Gradually whisk in milk until smooth, then simmer and stir until slightly thickened.
  • Reduce heat to low, add Velveeta and cheddar cheese, and stir until completely melted and smooth.
  • Stir in chili powder, cumin, garlic powder, and cayenne pepper (if using); season with salt to taste and keep warm.

Create the Secret Seasoning

  • In a small bowl, combine chili powder, cumin, smoked paprika, onion powder, garlic powder, dried oregano, cayenne pepper, white pepper, and salt.

Assemble Your Nacho Fries

  • Transfer hot, crispy fries to a large bowl, sprinkle with half of the secret seasoning, and toss gently to coat.

Serve

  • Arrange seasoned fries on a platter and drizzle generously with warm nacho cheese sauce; serve immediately.

Notes

For extra crispiness with fresh potatoes, consider soaking them in cold water for 30 minutes before baking and patting them dry. Adjust the cayenne pepper in both the cheese sauce and seasoning to control the spice level. Store leftover cheese sauce in an airtight container in the refrigerator and reheat gently on the stovetop or in the microwave, adding a splash of milk to loosen if needed.
