Main Ingredients

  • 2 lbs boneless, skinless chicken thighs or breasts cut into 1.5-2 inch pieces
  • 2 lbs potatoes (Russet, Yukon Gold, or red) scrubbed and cut into 1-1.5 inch cubes
  • 1 large yellow or white onion chopped
  • 4 cloves garlic minced (or 1 tsp garlic powder)
  • 1 cup chicken broth
  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1/2 tsp dried rosemary
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper

Preparation

  • Cut the potatoes into 1-1.5 inch cubes and chop the onion and mince the garlic.
  • Pat the chicken dry and cut it into 1.5-2 inch pieces of similar size.

Cooking

  • In a large bowl, combine chicken, potatoes, onion, and garlic with olive oil and all seasonings; mix thoroughly.
  • Transfer the seasoned mixture to your slow cooker and pour in the chicken broth.
  • Cook on low for 6-8 hours or on high for 3-4 hours until chicken is cooked through and potatoes are tender.
  • Stir gently before serving.

Notes

For best results, ensure chicken pieces are uniform for even cooking. Adjust seasoning to your preference.
