Ingredients
  

Main Ingredients

  • 2 lbs Boneless, Skinless Chicken Breasts or Thighs cut into 1-inch pieces or shredded
  • 1 can (28 ounce) Red Enchilada Sauce
  • 1 can (10 ounce) Diced Tomatoes with Green Chiles (Rotel) undrained
  • 1 Medium Onion chopped
  • 1 can (4 ounce) Sliced Black Olives drained (optional)
  • 10-12 Corn Tortillas torn into 1-inch pieces (or flour tortillas)
  • 2 cups Shredded Cheese Cheddar and Monterey Jack blend

Optional Toppings

  • Sour cream
  • fresh cilantro
  • avocado slices
  • pickled jalapeƱos

Instructions
 

Preparation

  • If using raw chicken, cut it into 1-inch pieces; if using cooked chicken, shred or dice it.
  • In a medium bowl, combine the enchilada sauce, diced tomatoes with green chiles, and chopped onion. Stir in drained black olives if desired.

Assembly

  • Pour approximately 1/2 cup of the sauce mixture into the bottom of a 6-quart or larger slow cooker.
  • Arrange about a third of the torn tortillas over the sauce.
  • Spread half of the chicken pieces over the tortillas, then spoon a third of the remaining sauce mixture over the chicken.
  • Sprinkle about a third of the shredded cheese over the chicken and sauce.
  • Repeat the tortilla, chicken, sauce, and cheese layers once more.
  • Top with the remaining tortillas, followed by the rest of the sauce mixture and the remaining cheese.

Cooking & Serving

  • Cover and cook on LOW for 3-4 hours or on HIGH for 2-3 hours, until the chicken is cooked through and the casserole is bubbly with melted cheese.
  • Let the casserole rest for 10-15 minutes before serving for easier scooping. Serve with optional toppings as desired.

Notes

For extra spice, add a pinch of cayenne pepper to the sauce mixture. You can also customize your toppings with a variety of fresh ingredients like salsa or guacamole.
