  • 2 tablespoons chipotle in adobo sauce (including some adobo sauce)
  • 3 cloves garlic minced
  • 1 tablespoon fresh lime juice
  • 1 tablespoon olive oil
  • 3 cups cooked rice (brown or white)
  • 1 large avocado sliced
  • 1/2 red onion thinly sliced
  • 1/4 cup fresh cilantro chopped

Instructions
 

Marinate the Chicken

  • Whisk together honey, chipotle in adobo, minced garlic, and lime juice in a bowl. Add chicken and coat well; then cover and refrigerate for at least 30 minutes, or 2-4 hours, for maximum flavor.

  • Heat olive oil in a large skillet over medium-high heat. Cook the chicken for 5-7 minutes per side, or until cooked through and caramelized.

Prepare Your Bowls

  • While the chicken cooks, prepare your rice according to package directions.

Assemble

  • Divide the cooked rice among bowls and arrange the sliced cooked chicken over the rice.

Garnish

  • Top with sliced avocado, thinly sliced red onion, and fresh cilantro, adding any other desired toppings like corn, black beans, or extra lime.

Notes
