  • 4 bone-in, skin-on chicken thighs
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 3 cloves garlic, minced
  • 1/2 cup honey
  • 1/4 cup soy sauce or tamari for gluten-free
  • 1 tablespoon apple cider vinegar
  • 1 teaspoon grated fresh ginger optional
  • 1 tablespoon fresh parsley, chopped for garnish

  • Pat the chicken thighs dry with paper towels, then season generously with salt and pepper on both sides.
  • Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken skin-side down for 6-8 minutes until golden and crispy, then flip and sear for 2-3 minutes on the other side before removing from the pan.
  • Reduce heat to medium, add minced garlic to the pan, and cook for 30 seconds until fragrant. Stir in honey, soy sauce, apple cider vinegar, and optional ginger, then simmer for 2-3 minutes until the sauce slightly thickens.
  • Return the seared chicken thighs to the skillet, nestling them into the glaze with the skin side up.
  • Transfer the skillet to a preheated oven at 375°F (190°C) and bake for 20-25 minutes, basting occasionally, until the internal temperature reaches 165°F (74°C).
  • Remove from the oven, let the chicken rest for 5 minutes, and then garnish with fresh chopped parsley before serving.

Notes

For extra flavor, marinate the chicken in a small amount of the glaze for at least 30 minutes before searing. Be careful not to burn the garlic when making the glaze; it can turn bitter quickly.
