Ingredients
  

Chicken Ingredients

  • 4 pieces boneless, skinless chicken breasts
  • 1/2 cup hot honey
  • 4 cloves fresh garlic, minced adds flavor
  • 2 tbsp olive oil for cooking
  • to taste Salt and pepper to season chicken

Base Ingredients

  • 2 cups cooked rice or quinoa for serving
  • 2 cups mixed vegetables (bell peppers, broccoli, snap peas) choose your preference
  • 1/4 cup low-sodium soy sauce to add umami
  • 2 tbsp fresh lime juice for acidity

Instructions
 

Preparation

  • Gather all ingredients and chop the vegetables.
  • Pat the chicken dry with paper towels and season both sides with salt and pepper.

Cooking

  • Heat olive oil in a skillet over medium-high heat.
  • Add the chicken to the skillet and sear it for 5-6 minutes on each side until it is golden brown and fully cooked.
  • In a small bowl, mix together the hot honey, soy sauce, and lime juice.
  • Pour the hot honey mixture into the pan with the chicken and stir well to coat.
  • Toss in the mixed vegetables during the last few minutes of cooking and cook until the veggies are tender yet still crisp.

Serving

  • Serve the chicken over a bed of rice or quinoa and drizzle with any extra sauce from the pan.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days. Reheat in the microwave when ready to eat. Tips: Don’t overcrowd the skillet to ensure proper searing. Adjust hot honey to your taste. Add heartier vegetables earlier during cooking.
