Instant Crispy Healthy Beetroot Pink Dosa

Ingredients
  

Dosa Batter

  • 1 medium-sized Beetroot cooked and peeled (about 1 cup chopped)
  • 1 cup Rice Flour
  • 1/2 cup Fine Semolina (Rava)
  • 1/4 cup Plain Yogurt dairy or non-dairy, or 1/4 cup lemon juice for vegan option
  • 1 to 1.5 cups Water adjust as needed for batter consistency
  • 1 inch piece Ginger grated or finely chopped
  • 1 Green Chili optional, for a little heat
  • 1/2 teaspoon Cumin Seeds
  • Salt To taste
  • 1/4 teaspoon Baking Soda optional, for extra crispness

For cooking

  • Oil or Ghee For cooking the dosas

Instructions
 

Preparation

  • Steam or boil the beetroot until tender, then peel and chop it into small pieces.
  • In a blender, combine the cooked beetroot, grated ginger, and green chili with about 1/2 cup of water; blend until very smooth.
  • In a large bowl, mix rice flour, semolina, salt, and cumin seeds.
  • Add the beetroot paste and yogurt to the dry ingredients, then gradually whisk in the remaining water until the batter has a smooth, pouring consistency.
  • Let the batter rest for 15-20 minutes to allow the semolina to absorb the liquid.
  • Just before cooking, check the batter consistency and add more water if needed; if using baking soda, stir it in gently now.

Cooking

  • Heat a non-stick griddle over medium to medium-high heat, testing its readiness with water droplets.
  • Lightly grease the griddle, then pour and spread a ladleful of batter in a circular motion to form a thin dosa.
  • Drizzle oil or ghee around the edges and on top of the dosa.
  • Cook for 2-3 minutes until the edges lift and the bottom is golden brown and crispy.
  • Gently lift and serve the dosa hot, repeating with the remaining batter.

Notes

For an even crispier dosa, ensure your griddle is adequately hot before pouring the batter. You can adjust the spice level by adding more or less green chili. These dosas are best enjoyed fresh off the griddle!
