These mini peppers are stuffed with a creamy, savory cheese filling and topped with everything bagel seasoning, then baked until tender-crisp. They make a perfect appetizer or snack.

  • 24 mixed colors Mini Bell Peppers
  • 8 ounces Cream Cheese softened
  • 1/4 cup Sour Cream (or Greek Yogurt)
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 2 tablespoons Fresh Chives finely chopped
  • 2-3 tablespoons Everything Bagel Seasoning plus extra for garnish

Instructions
 

Preparation

  • Preheat oven to 375°F (190°C). Wash and dry mini bell peppers, then slice them in half lengthwise and remove seeds and membranes.
  • Arrange the pepper halves cut-side up on a baking sheet.

Making the Filling

  • In a medium bowl, combine softened cream cheese, sour cream (or Greek yogurt), garlic powder, and onion powder.
  • Mix until smooth, then stir in the chopped fresh chives.

Stuffing & Baking

  • Transfer the cream cheese mixture into a piping bag (or use a spoon) and fill each pepper half generously.
  • Sprinkle the tops of the stuffed peppers generously with everything bagel seasoning.
  • Bake for 15-20 minutes, or until peppers are tender-crisp and the filling is warm and lightly golden.

Serving

  • Remove from oven and let cool for a few minutes before serving.

Notes

For extra flavor, you can roast the mini peppers slightly before stuffing. Adjust the amount of everything bagel seasoning to your preference. These are best served warm, but can also be enjoyed at room temperature.
