  • 1/2 cup sour cream (or Greek yogurt)
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried thyme
  • 1/2 teaspoon smoked paprika
  • 1 tablespoon Dijon mustard
  • Salt and pepper to taste

Topping

  • 1/2 cup crushed butter crackers (like Ritz)
  • 2 tablespoons melted butter

  • 1 tablespoon olive oil for sautéing aromatics

Preparation

  • Preheat oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.

Cooking the aromatics

  • Heat olive oil in a large skillet over medium heat, then add chopped onion and cook for 5-7 minutes until softened. Stir in minced garlic and cook for an additional minute until fragrant.

Combine main ingredients

  • Add shredded cooked chicken, cream of chicken soup, milk, and thawed mixed vegetables to the skillet, mixing well. Stir in sour cream, Parmesan cheese, thyme, paprika, and Dijon mustard until thoroughly combined. Adjust seasoning with salt and pepper as needed.

Assemble the Casserole

  • Pour the chicken mixture into the prepared baking dish, spreading it evenly. In a small bowl, combine crushed butter crackers with melted butter, then sprinkle this mixture over the casserole.

Bake and Serve

  • Bake for 25-30 minutes until bubbly and the cracker topping is golden brown and crisp. Remove from the oven and let rest for 5-10 minutes before serving.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the chicken mixture. You can also substitute cheddar cheese for Parmesan cheese in the topping. This casserole reheats well and is a great option for meal prepping.
