Meatballs

  • 1 lb Ground Chicken preferably 90/10 or 85/15
  • 1/4 cup Panko Breadcrumbs
  • 1/4 cup Grated Parmesan Cheese
  • 1 Egg large
  • 2 cloves Garlic minced
  • 1/4 cup Fresh Parsley chopped
  • 1 tsp Dried Oregano
  • 1/2 tsp Salt
  • 1/4 tsp Black Pepper
  • 2 tbsp Mayonnaise The Secret Ingredient!

For Cooking

  • 1 tbsp Olive Oil
  • 1 jar Marinara Sauce 24 oz

Preparation

  • In a large bowl, combine ground chicken, panko breadcrumbs, Parmesan cheese, egg, garlic, parsley, oregano, salt, pepper, and mayonnaise.
  • Gently mix the ingredients with your hands until just combined, being careful not to overmix to prevent tough meatballs.

Cooking

  • Roll the mixture into 1 ½-inch to 2-inch meatballs, yielding about 18-20 meatballs.
  • Heat olive oil in a large non-stick skillet or Dutch oven over medium-high heat. Sear meatballs in batches for 3-4 minutes, turning occasionally, until browned on all sides.
  • Pour marinara sauce over the seared meatballs, bring to a gentle simmer, then reduce heat to low, cover, and cook for 15-20 minutes until meatballs are cooked through and tender.

Serving

  • Garnish with extra fresh parsley or Parmesan cheese and serve hot.

Notes

For extra flavor, consider adding a pinch of red pepper flakes to the marinara sauce. These meatballs are great served with pasta, in a sub roll, or simply with a side of crusty bread to soak up the sauce.
