  • 1 lb fresh green beans, trimmed
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp dried thyme
  • Salt and freshly ground black pepper to taste
  • 1/4 cup sliced almonds, toasted

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • In a large bowl, toss the trimmed green beans with olive oil, minced garlic, oregano, thyme, salt, and pepper until evenly coated.
  • Spread the seasoned green beans in a single layer on the prepared baking sheet for even cooking.
  • Roast for 10-15 minutes, or until tender-crisp and slightly charred in places, checking for desired doneness.
  • While the green beans roast, lightly toast the sliced almonds in a dry skillet over medium-low heat for 3-5 minutes until golden and fragrant, stirring frequently to prevent burning.
  • Remove green beans from the oven, transfer to a serving dish, and sprinkle with toasted almonds; serve immediately.

Notes

For extra flavor, you can add a squeeze of fresh lemon juice before serving. Make sure not to overcrowd the baking sheet to ensure even roasting and browning of the green beans. The toasting of almonds can be done ahead of time to save a step during cooking.
