  • 1 pound ground beef
  • 1 medium yellow onion diced
  • 3 cloves garlic minced
  • 28 ounces can crushed tomatoes
  • 15 ounces can tomato sauce
  • 4 cups beef broth
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 lasagna noodles broken into 2-inch pieces

Ricotta Topping

  • 1 cup ricotta cheese
  • 1/4 cup Parmesan cheese grated
  • 2 tablespoons fresh parsley chopped
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper

Cooking Steps

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add ground beef and cook until browned, breaking it up with a spoon.
  • Drain any excess fat. Add diced onion and cook until softened, about 5 minutes.
  • Stir in minced garlic and cook for 1 minute more until fragrant.
  • Pour in crushed tomatoes, tomato sauce, and beef broth.
  • Add dried oregano, dried basil, salt, and black pepper. Bring the soup to a simmer.
  • Add broken lasagna noodles to the simmering soup. Cook for 10-12 minutes, or until the noodles are al dente, stirring occasionally to prevent sticking.
  • While the soup cooks, prepare the ricotta topping. In a small bowl, combine ricotta cheese, grated Parmesan cheese, chopped fresh parsley, salt, and black pepper. Mix well.
  • Ladle the hot lasagna soup into bowls. Top each serving with a dollop of the ricotta mixture and a sprinkle of extra Parmesan cheese or fresh parsley, if desired. Serve immediately.

Notes

For extra flavor, you can brown the ground beef with Italian sausage. If you prefer a vegetarian option, omit the meat and use vegetable broth instead of beef broth. A pinch of red pepper flakes can add a nice kick to the soup. If the soup is too thick, add more beef broth until desired consistency is reached.
