Meatloaf

  • 1 lb lean ground turkey
  • 1/2 cup finely chopped bell pepper (any color)
  • 1/4 cup finely chopped onion
  • 1/4 cup whole wheat breadcrumbs
  • 1 large egg lightly beaten
  • 2 tbsp ketchup low sugar preferred
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried Italian herbs
  • 1/2 tsp garlic powder
  • Salt and black pepper to taste

Optional Glaze

  • 2 tbsp low sugar ketchup
  • 1 tsp maple syrup
  • 1/2 tsp Dijon mustard

  • Preheat oven to 375°F (190°C) and lightly grease a loaf pan.
  • In a large bowl, combine ground turkey, bell pepper, onion, breadcrumbs, egg, 2 tablespoons ketchup, Worcestershire sauce, Italian herbs, garlic powder, salt, and pepper. Mix gently to combine, avoiding overmixing.
  • Press the meat mixture evenly into the prepared loaf pan.
  • For the glaze, whisk together ketchup, maple syrup, and Dijon mustard in a small bowl. Spread the glaze evenly over the meatloaf.
  • Bake for 45-55 minutes, or until the internal temperature reaches 165°F (74°C).
  • Remove from oven and let rest for 5-10 minutes before slicing and serving.

Notes

To avoid a dry meatloaf, be careful not to overmix the ingredients. Letting the meatloaf rest helps keep it moist and makes it easier to slice.
