Lemon Herb Baked Salmon with Roasted Asparagus

Ingredients
  

Salmon and Herb Mixture

  • 2 (6 oz) salmon fillets skin-on or skin-off
  • 1 tbsp olive oil
  • 1 lemon half thinly sliced, half for juice
  • 2 sprigs fresh dill chopped
  • 1 sprig fresh parsley chopped
  • ½ tsp garlic powder
  • ¼ tsp black pepper
  • Salt to taste

Asparagus

  • 1 bunch asparagus trimmed
  • 1 tbsp olive oil for asparagus
  • Salt and pepper to taste (for asparagus)

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • Pat the salmon fillets dry thoroughly with paper towels.

Assemble

  • In a small bowl, whisk together 1 tbsp olive oil, lemon juice, chopped dill, chopped parsley, garlic powder, black pepper, and salt.
  • Place salmon on the baking sheet and drizzle the herb-lemon mixture over each fillet, then top with lemon slices.
  • In another bowl, toss trimmed asparagus with 1 tbsp olive oil, salt, and pepper.
  • Arrange the seasoned asparagus around the salmon on the same baking sheet.

Bake & Serve

  • Bake for 12-18 minutes, or until the salmon flakes easily and reaches an internal temperature of 145°F (63°C), and the asparagus is tender-crisp.
  • Let the salmon rest for 5 minutes before serving with the roasted asparagus.

Notes

For extra flavor, marinate the salmon in the herb and lemon mixture for 15-20 minutes before baking. Adjust cooking time based on the thickness of your salmon fillets.
