  • 1.5 lbs boneless, skinless chicken breasts or thighs
  • 1 lb small potatoes, quartered
  • 1 bag baby carrots (12 oz)
  • 1 onion, roughly chopped
  • 2 stalks celery, chopped
  • 1 cup chicken broth
  • 1/4 cup fresh lemon juice
  • 2 tbsp olive oil
  • 1 tbsp dried Italian seasoning
  • 1 tsp garlic powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup fresh parsley, chopped (for garnish, optional)

  • Arrange potatoes, carrots, onion, and celery in the bottom of your slow cooker.
  • Whisk together chicken broth, lemon juice, olive oil, Italian seasoning, garlic powder, salt, and pepper in a small bowl.
  • Place chicken on top of the vegetables in the slow cooker, then pour the liquid mixture evenly over them.
  • Cover and cook on low for 6-8 hours or high for 3-4 hours, until chicken is tender and vegetables are cooked.
  • Shred the chicken in the slow cooker, if desired, mixing it with the vegetables and sauce; then serve hot, garnished with fresh parsley.

Notes

For best flavor, ensure the chicken is fully submerged in the liquids if possible. Adjust seasoning to taste before serving.
