Ingredients
  

Main Ingredients

  • 1 cup full-fat cottage cheese
  • 2 scoops vanilla protein powder
  • 2 tablespoons maple syrup or to taste
  • 1 tablespoon lemon zest
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon poppy seeds

Optional Coating

  • extra poppy seeds or shredded coconut for coating

Instructions
 

Preparation

  • In a food processor, blend cottage cheese, protein powder, and maple syrup until completely smooth, scraping down sides.
  • Transfer the smooth mixture to a bowl and fold in lemon zest, lemon juice, and poppy seeds until well combined.
  • Cover and refrigerate for at least 30 minutes, or preferably an hour, to allow the mixture to firm.
  • Once chilled, scoop portions and roll into bite-sized balls between your palms.
  • Optionally, roll the formed balls in extra poppy seeds or shredded coconut for coating.
  • Place balls on a parchment-lined plate and refrigerate for another 15-30 minutes to set completely before serving.

Notes

For best results, ensure the cottage cheese mixture is very smooth before adding other ingredients. Adjust sweetness to your preference. These protein balls are great for a pre- or post-workout snack or a healthy dessert.
