Ingredients
  

Parfait Base

  • 1 ½ cups plain Greek yogurt or mascarpone cheese
  • ¼ cup lemon curd
  • 1 teaspoon lemon zest
  • 2 tablespoons powdered sugar or to taste

Layers & Toppings

  • 1 ½ cups fresh raspberries
  • ½ cup granola or crushed shortbread cookies

Instructions
 

Prepare Parfait Cream

  • In a bowl, combine Greek yogurt (or mascarpone), lemon curd, lemon zest, and powdered sugar.
  • Whisk the ingredients together until the mixture is smooth and creamy.

Assemble Parfaits

  • In each of 4 clear dessert glasses or jars, spoon a layer of the prepared yogurt mixture.
  • Top this layer with fresh raspberries, then sprinkle with granola or crushed shortbread.
  • Repeat these layers until glasses are full, ensuring the final touch is raspberries and granola.

Chill & Serve

  • Refrigerate the parfaits for at least 30 minutes to allow the flavors to meld together.
  • Alternatively, you may serve the parfaits immediately after assembly for a quicker treat.

Notes

For best results, use good quality Greek yogurt or mascarpone. If using homemade lemon curd, ensure it is completely cooled before mixing. Adjust sweetness by adding more or less powdered sugar to taste. You can also experiment with different berries or nuts for variety.
