  • 3 cups Broccoli florets
  • 1 pint Cherry Tomatoes
  • 4 cloves Garlic minced
  • 2 tbsp Olive Oil
  • 1 tsp Paprika
  • 1 tsp Dried Oregano
  • 0.5 tsp Salt
  • 0.25 tsp Black Pepper
  • 1 for serving Lemon Wedges

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.

Mixing

  • In a large bowl, combine the shrimp, bell peppers, broccoli, cherry tomatoes, garlic, olive oil, paprika, oregano, salt, and pepper. Toss until well coated.

Roasting

  • Spread the seasoned mixture in a single layer on the prepared baking sheet, ensuring space for roasting. Roast for 12-15 minutes, or until the shrimp are pink and the vegetables are tender-crisp.

Serving

  • Remove from the oven and serve immediately with fresh lemon wedges.

Notes

For extra flavor, you can marinate the shrimp and veggies for 15-20 minutes before roasting. Adjust spice levels to your preference, and feel free to add other quick-cooking vegetables like asparagus or zucchini.
