  • 1 tbsp olive oil
  • 1/4 cup finely chopped shallots
  • 1 cup jasmine rice
  • 2 cups vegetable broth
  • 1/4 cup chopped fresh parsley
  • 1/4 cup chopped fresh dill
  • 2 tbsp chopped fresh chives
  • 1 Zest of lemon
  • 1/2 Juice of lemon
  • 2 tbsp grated Parmesan cheese optional, for creaminess
  • Salt and freshly ground black pepper to taste

Cooking Instructions

  • Heat olive oil in a medium saucepan. Add chopped shallots and sauté for 2-3 minutes until soft and translucent.
  • Stir in jasmine rice for 1 minute to lightly toast the grains before adding the vegetable broth.
  • Bring to a boil, then reduce heat, cover, and simmer for 15-18 minutes until the liquid is absorbed and rice is tender.
  • Remove from heat and let the rice rest, covered, for 5 minutes.
  • Uncover and gently fluff the rice with a fork.
  • Stir in the fresh herbs (parsley, dill, chives), lemon zest, and lemon juice. Mix in Parmesan cheese if desired.
  • Season with salt and pepper to taste and serve warm as a side dish.

Notes

For best results, do not lift the lid while the rice is simmering to ensure even cooking and absorption of liquid.
