  • 4 (6 oz) salmon fillets skin-on or skinless
  • 1 tbsp olive oil
  • 1 lemon half thinly sliced, half juiced
  • 2 cloves garlic minced
  • 1 tbsp fresh dill chopped (or 1 tsp dried dill)
  • 1 tbsp fresh parsley chopped
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 lb asparagus trimmed
  • 1 pint cherry tomatoes

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a small bowl, combine olive oil, lemon juice, minced garlic, dill, parsley, salt, and pepper.
  • Arrange salmon fillets on one side of the baking sheet and place asparagus and cherry tomatoes on the other side.

Cooking

  • Brush the salmon generously with the herb-lemon mixture and toss the vegetables with any remaining mixture, then arrange lemon slices over the salmon.
  • Bake for 12-18 minutes, or until the salmon is cooked through and flakes easily, and the vegetables are tender-crisp.

Serving

  • Remove from oven, let the salmon rest for 2-3 minutes, then serve immediately with the roasted vegetables.

Notes

Cooking time for salmon can vary based on thickness; adjust as needed to ensure it's cooked through but not overdone. For extra zest, you can add some lemon zest to the herb mixture along with the juice.
