Meatloaf

  • 1 ½ lbs lean ground beef (90/10 or 93/7)
  • ½ cup breadcrumbs (panko or whole wheat)
  • ½ cup milk (skim or low-fat)
  • 1 large egg
  • ¼ cup finely chopped onion
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon salt
  • ¼ teaspoon black pepper

For the Glaze (Optional)

  • ½ cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon apple cider vinegar

  • Preheat your oven to 350°F (175°C) and prepare a loaf pan or baking sheet.
  • In a large bowl, whisk together the milk, egg, Worcestershire sauce, salt, and pepper.
  • Stir in the breadcrumbs and chopped onion, allowing the breadcrumbs to absorb the liquid.
  • Gently mix in the lean ground beef until just combined, being careful not to overmix.
  • Transfer the mixture to the prepared pan and shape it into an even loaf.
  • (Optional) Bake the meatloaf for 20-25 minutes before adding the glaze to help it set.
  • While the meatloaf bakes, whisk together ketchup, brown sugar, and apple cider vinegar for the glaze.
  • Remove the meatloaf, spread the glaze over the top, and return to the oven to bake for another 25-35 minutes until it reaches 160°F (71°C).
  • Let the meatloaf rest in the pan for 10-15 minutes after baking to redistribute the juices.
  • Slice and serve your delicious Lightened-Up Classic Meatloaf.

Notes

For best results, do not overmix the meatloaf mixture. This recipe can be easily doubled for a larger crowd. Serve with your favorite mashed potatoes or a side salad.
