Lightened-Up Turkey & Veggie Breakfast Bake

  • 6-8 slices whole-grain bread (day-old or lightly toasted)
  • 8 oz lean breakfast sausage or turkey bacon (cooked and crumbled or diced and cooked)
  • 1 cup chopped bell peppers (any color)
  • 1 cup chopped fresh spinach
  • 1/2 cup diced yellow onion
  • 8 large eggs
  • 1 cup skim milk (or unsweetened almond milk)
  • 1/2 cup shredded reduced-fat cheddar cheese
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon garlic powder (Optional)
  • Pinch red pepper flakes (Optional)

Instructions
 

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large skillet, cook the sausage or turkey bacon over medium heat until browned, then drain any excess fat.
  • Add onion and bell peppers to the skillet, sauté for 5-7 minutes until softened, then stir in spinach until wilted and remove from heat.
  • Spread the cubed whole-grain bread evenly in the prepared baking dish.
  • Spoon the cooked sausage/bacon and vegetable mixture evenly over the bread cubes.
  • In a large bowl, whisk together the eggs, milk, salt, pepper, and optional garlic powder and red pepper flakes.
  • Pour the egg mixture over the bread and vegetable layers, gently pressing down to moisten all the bread.
  • Sprinkle the shredded reduced-fat cheddar cheese over the top of the casserole.
  • Bake for 35-45 minutes, or until the casserole is set, golden brown, and a knife inserted into the center comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving.

Notes

This breakfast bake is excellent for meal prepping. You can assemble it the night before and bake it in the morning. Feel free to customize the vegetables based on what you have on hand. Leftovers can be stored in an airtight container in the refrigerator for up to 3-4 days and reheated in the microwave or oven.
