  • 1.5 lbs Cod Fillets thick-cut, skinless
  • 1 tablespoon Coconut Oil
  • 3 cloves Garlic minced
  • 1 tablespoon Fresh Ginger grated
  • 0.5 teaspoon Red Pepper Flakes adjust to preference
  • 1 can Full-Fat Coconut Milk 13.5 oz
  • 1 Lemon large (zest and juice)
  • 0.25 cup Fresh Cilantro chopped (for garnish)
  • Salt and Black Pepper To taste
  • Turmeric Optional: A pinch of turmeric

Preparation

  • Pat the cod fillets dry with paper towels and season them generously with salt and pepper on both sides.

Cooking

  • Heat coconut oil in a large skillet over medium-high heat, then sear the cod for 3-4 minutes per side until golden and just cooked through; remove and set aside.
  • Reduce heat to medium, add minced garlic, grated ginger, and red pepper flakes to the same skillet, and sauté for 1-2 minutes until fragrant.
  • Pour in coconut milk, lemon zest, and half the lemon juice (add turmeric if desired), then simmer for 3-5 minutes to reduce and thicken, scraping up browned bits.
  • Return the seared cod to the skillet, nestle it into the sauce, spoon sauce over the fish, and cook for another 3-5 minutes until the cod flakes easily.

Serving

  • Taste the sauce and adjust seasonings as needed, then garnish generously with fresh chopped cilantro just before serving.

Notes

For extra flavor, you can marinate the cod for 15-20 minutes in a little lemon juice and salt before searing. Be careful not to overcook the cod; it cooks quickly and can become dry if overdone. Serve this dish with a side of steamed rice or quinoa to soak up the delicious sauce.
