Equipment

  • large mixing bowl
  • electric mixer

Ingredients

Main Ingredients

  • 8 ounces full-fat block cream cheese softened to true room temperature
  • 1/2 cup unsalted butter (1 stick) softened to true room temperature
  • 4 cups powdered sugar (confectioners' sugar) sifted
  • 1 teaspoon pure vanilla extract
  • 1/4 teaspoon salt
  • 1 teaspoon fresh lemon juice (Optional)

Instructions

Preparation

  • Ensure cream cheese and butter are at true room temperature; sift powdered sugar to remove lumps.
  • Using an electric mixer, beat softened butter and cream cheese until smooth, light, and fluffy, scraping down the bowl frequently.
  • Add vanilla extract, salt, and optional lemon juice; beat on low speed until just combined.
  • Gradually add sifted powdered sugar, one cup at a time, mixing until fully incorporated after each addition.
  • Increase mixer speed to medium-low and beat until the frosting is smooth and creamy; avoid overmixing.
  • If frosting is too soft, chill for 15-30 minutes; if too thick, add small amounts of milk or cream and re-whip until desired consistency is achieved.

Notes

For best results, do not overmix the frosting once the powdered sugar is added, as this can make it runny. If you find your frosting is too soft, a quick chill in the refrigerator can help it firm up. Conversely, a splash of milk or cream can thin a frosting that's too stiff. Always start with properly softened ingredients for a truly smooth and airy frosting.
