  • 4-6 ounce each Salmon fillets wild-caught
  • Brussels sprouts Halved, or quartered if very large
  • Sweet potatoes Cut into 1/2-inch cubes
  • Broccoli florets Roughly uniform in size

For Roasting & Glaze

  • 2 tablespoons Olive oil good quality extra virgin
  • 1/4 cup Maple syrup pure
  • 1 tablespoon Dijon mustard
  • 1 teaspoon Garlic powder (or 2 cloves fresh minced garlic)
  • 1/2 teaspoon Salt or to taste
  • 1/4 teaspoon Freshly ground black pepper or to taste

Optional Garnish

  • Fresh parsley or chives chopped lemon wedges

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C). Toss the Brussels sprouts, sweet potatoes, and broccoli florets with olive oil, salt, and pepper on a large baking sheet and spread them in a single layer.

Roasting

  • Roast the vegetables in the preheated oven for 15 minutes to give them a head start and ensure even cooking.
  • While vegetables roast, whisk maple syrup, Dijon mustard, garlic powder, salt, and pepper in a small bowl to create the glaze for the salmon.

Combine & Finish

  • After 15 minutes, remove the baking sheet, push the vegetables aside, and place the salmon fillets skin-side down on the pan.
  • Drizzle the maple glaze generously over each salmon fillet. Return the pan to the oven and continue roasting for 12-18 minutes until the salmon is cooked through and the vegetables are tender and caramelized.

Serving

  • Carefully remove the pan from the oven. Garnish with fresh parsley or chives and a squeeze of fresh lemon, if desired, and serve immediately.

Notes

The cooking time for salmon can vary based on its thickness; adjust as needed to ensure it flakes easily. For a spicier kick, add a pinch of red pepper flakes to the glaze. Serving with a side of quinoa or brown rice can make this a more substantial meal.
