  • 3 medium-sized sweet potatoes (about 2 lbs), peeled and cut into 1-inch cubes
  • 3 tablespoons unsalted butter melted
  • 1/4 cup pure maple syrup (grade A dark, robust taste, or amber rich taste)
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 teaspoon salt or to taste
  • 1/4 teaspoon freshly ground black pepper
  • 4 ounces brie cheese rind removed and cut into small pieces
  • 1/2 cup chopped pecans

Preparation

  • Preheat oven to 400°F (200°C) and lightly grease a 9x13 inch baking dish or line a baking sheet with parchment paper.
  • In a large bowl, combine cubed sweet potatoes, melted butter, maple syrup, cinnamon, nutmeg, salt, and pepper; toss to coat evenly.
  • Spread the seasoned sweet potatoes in a single layer and roast for 20-25 minutes, stirring halfway, until tender and caramelized.
  • Remove from oven, scatter brie pieces and chopped pecans over the sweet potatoes.
  • Return to oven for 8-12 minutes, until brie is melted and bubbly, and pecans are lightly toasted; watch pecans to prevent burning.
  • Remove from oven and let it sit for a few minutes before serving as brie will be very hot.

Notes

For extra flavor, you can toast the pecans lightly before adding them to the dish. This recipe makes a great Thanksgiving side dish or a unique appetizer for any gathering.
