  • 1.5 lbs Salmon Fillets
  • Olive Oil For searing
  • Unsalted Butter For richness
  • 4-6 cloves Garlic minced
  • 1/2 cup Sun-Dried Tomatoes packed in oil, drained and chopped
  • 1.5 cups Heavy Cream
  • 1/2 cup Chicken or Vegetable Broth
  • 1/2 cup Parmesan Cheese freshly grated (optional)
  • 2-3 cups Spinach fresh
  • 2 tablespoons Fresh Parsley or Basil chopped
  • 1/4 teaspoon Red Pepper Flakes (optional)
  • Salt and Black Pepper To taste

Preparation

  • Pat the salmon fillets dry and season generously with salt and black pepper on both sides.

Cooking

  • Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the salmon for 4-5 minutes skin-side down until crispy, then flip and sear for 2-3 minutes more. Remove and set aside.
  • Reduce heat to medium, add butter to the skillet, then sauté minced garlic and chopped sun-dried tomatoes for 1-2 minutes until fragrant.
  • Pour in heavy cream and chicken broth, bringing it to a gentle simmer. Stir in red pepper flakes and Parmesan cheese if using, and season with salt and pepper.
  • Stir in the fresh spinach, a handful at a time, allowing it to wilt into the sauce.
  • Nestle the seared salmon back into the sauce and simmer for 2-3 minutes more to finish cooking.

Serving

  • Garnish generously with fresh chopped parsley or basil and serve immediately.

Notes

For best results, use fresh salmon fillets. Adjust the amount of red pepper flakes to your spice preference. Serve with a side of rice or crusty bread to soak up the delicious sauce.
