Ingredients
  

Chickpea Salad

  • 1 can (15 ounces) chickpeas rinsed and drained
  • 1/4 cup diced cucumber
  • 1/4 cup diced tomato
  • 2 tablespoons finely diced red onion
  • 1 tablespoon lemon juice
  • 1 tablespoon olive oil
  • 1/2 teaspoon dried oregano

Wraps

  • 2 whole wheat tortillas
  • 2 tablespoons hummus
  • 1 cup fresh spinach

Instructions
 

Prepare the Chickpea Salad

  • Mash the rinsed and drained chickpeas in a medium bowl until mostly broken down but still retaining some texture.
  • Add the diced cucumber, diced tomato, and finely diced red onion to the mashed chickpeas.
  • Drizzle in the lemon juice and olive oil, then sprinkle with dried oregano.
  • Mix all ingredients thoroughly until well combined and the flavors are evenly distributed.

Assemble the Wraps

  • Lay out a whole wheat tortilla and spread one tablespoon of hummus evenly over its surface.
  • Spoon half of the chickpea salad mixture onto the center of the tortilla.
  • Top the salad mixture with a handful of fresh spinach.
  • Roll up the tortilla tightly, tucking in the sides as you go, to form a wrap.
  • Repeat the process with the second tortilla and the remaining ingredients.
  • Serve the wraps immediately or pack them for later consumption.

Notes

These wraps are great for meal prepping. You can prepare the chickpea salad ahead of time and assemble the wraps when ready to eat. Adjust the amount of lemon juice and oregano to your taste. For a bit of heat, add a pinch of red pepper flakes.
