  • 8 ounces block feta cheese
  • ½ cup cherry or grape tomatoes
  • ¼ cup pitted Kalamata olives
  • Fresh mint leaves (optional)
  • Balsamic glaze (optional, for drizzling)

Preparation

  • Wash the cucumber and cut it into ½-inch thick slices, then halve them into semi-circles or cut into bite-sized cubes.
  • Cut the block of feta cheese into roughly ½-inch cubes, aiming for uniform size.
  • Wash the cherry tomatoes and ensure the Kalamata olives are pitted.
  • Thread the ingredients onto the skewers, alternating between cucumber, feta, tomato, and olive. Optionally, tuck a fresh mint leaf between ingredients.
  • Arrange the assembled skewers on a platter and drizzle with balsamic glaze just before serving, if desired.

Notes

For best flavor, use high-quality feta cheese and fresh, ripe tomatoes. These skewers can be prepared a few hours in advance and kept refrigerated until serving. Add the balsamic glaze just before serving to prevent the skewers from becoming soggy.
