  • 1 tablespoon olive oil
  • 1 pound lean ground turkey (93% lean or higher)
  • medium yellow onion chopped
  • 2-3 garlic cloves, minced
  • 2 medium zucchini diced
  • 1/2 cup vegetable broth
  • 1 cup diced bell peppers red, yellow, or orange
  • 1/2 cup pitted Kalamata olives halved
  • 1 teaspoon dried oregano
  • 1/2 teaspoon smoked paprika
  • Salt and black pepper to taste

For Garnish

  • 1/4 cup crumbled feta cheese
  • 2 tablespoons fresh parsley chopped

Cooking Steps

  • Heat olive oil in a large skillet or non-stick pan over medium-high heat.
  • Add ground turkey to the skillet, break it apart, and cook until browned for 5-7 minutes. Drain any excess fat.
  • Push the cooked turkey to one side. Add chopped onion and sauté for 3-4 minutes until softened. Then, add minced garlic and cook for one minute until fragrant.
  • Stir the onion and garlic into the ground turkey. Add the diced zucchini, diced bell peppers, Kalamata olives, dried oregano, smoked paprika, salt, and pepper.
  • Pour in the vegetable broth. Sauté for 5-7 minutes until the zucchini and bell peppers are tender-crisp.
  • Taste and adjust seasonings. Serve hot, garnished with crumbled feta cheese and fresh chopped parsley. Enjoy on its own or over quinoa or cauliflower rice.

Notes

This dish can be easily customized with other vegetables like spinach or cherry tomatoes. For a spicier kick, add a pinch of red pepper flakes with the spices.
