Mediterranean Steak & Quinoa Power Bowl

This power bowl features tender sirloin or flank steak marinated in Mediterranean spices, served over fluffy quinoa with fresh vegetables, salty Kalamata olives, creamy feta, and a refreshing homemade tzatziki-inspired sauce.

Ingredients
  

For the Steak & Marinade:

  • 1 lb sirloin or flank steak cut into 1-inch strips
  • 2 tbsp olive oil divided
  • 1 tsp dried oregano
  • 0.5 tsp dried thyme
  • 0.5 tsp garlic powder
  • Salt and black pepper to taste
  • 1 tbsp lemon juice

For the Grain Base:

  • 1 cup cooked quinoa prepare according to package directions

For the Vegetables & Toppings:

  • 1 cup cherry tomatoes halved
  • 0.5 English cucumber diced
  • 0.5 red onion thinly sliced
  • 0.25 cup Kalamata olives pitted and halved
  • 0.25 cup crumbled feta cheese
  • 0.25 cup fresh parsley chopped
  • 0.25 avocado sliced (optional)

For the Tzatziki-inspired Sauce:

  • 0.5 cup plain Greek yogurt
  • 0.25 cucumber grated and squeezed of excess water
  • 1 clove garlic minced
  • 1 tbsp fresh dill chopped
  • 0.5 tbsp lemon juice
  • Salt and pepper to taste

Instructions
 

Marinate the Steak:

  • Combine steak strips with 1 tbsp olive oil, oregano, thyme, garlic powder, salt, pepper, and lemon juice in a bowl. Toss to coat and marinate for 15-30 minutes.

Prepare the Grain:

  • Cook quinoa according to package directions.

Make the Sauce:

  • Whisk together Greek yogurt, grated cucumber, minced garlic, fresh dill, lemon juice, salt, and pepper in a small bowl. Refrigerate until ready to serve.

Cook the Steak:

  • Heat 1 tbsp olive oil in a large skillet over medium-high heat. Sear marinated steak for 2-3 minutes per side for medium-rare, then remove and let rest.

Assemble the Bowls:

  • Divide cooked quinoa among serving bowls and arrange the cooked steak over it. Arrange cherry tomatoes, diced cucumber, red onion, Kalamata olives, feta, and avocado around the steak. Dollop with tzatziki sauce and garnish with fresh parsley. Serve immediately.

Notes

For extra flavor, marinate the steak overnight. Adjust the amount of garlic and lemon juice in the tzatziki sauce to your preference. This recipe is also great for meal prepping.
