  • 2 (5-ounce) cans tuna in olive oil
  • 1 (15-ounce) can cannellini beans
  • 1/4 cup finely diced red onion
  • 1/4 cup finely diced celery
  • 1/4 cup chopped fresh parsley
  • 1/4 cup Kalamata olives, pitted and chopped
  • 1/4 cup sun-dried tomatoes (oil-packed), drained and chopped
  • 2 tablespoons crumbled feta cheese

Dressing

  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon fresh lemon juice
  • 1 teaspoon Dijon mustard

Seasoning

  • Salt and freshly ground black pepper to taste
  • Pinch dried oregano optional

Preparation

  • Drain tuna and flake into a medium mixing bowl; rinse and drain cannellini beans, then add to the bowl.
  • Dice red onion and celery, chop parsley, then add them to the bowl along with olives, sun-dried tomatoes, and feta cheese.

Dressing and Serving

  • Whisk together olive oil, lemon juice, Dijon mustard, salt, pepper, and optional oregano in a separate small bowl.
  • Pour the dressing over the tuna mixture and gently toss until everything is well combined and evenly coated.
  • Cover and refrigerate for 15-30 minutes for best flavor, then stir again before serving.
