  • 1 tbsp olive oil
  • 1 lb ground turkey 93/7 lean
  • 1 medium red onion finely diced
  • 3 cloves garlic minced
  • 1/2 cup sun-dried tomatoes oil-packed, drained and chopped
  • 1 cup dry orzo pasta
  • 3 cups chicken or vegetable broth
  • 1/2 tsp dried oregano
  • Salt and freshly ground black pepper to taste
  • 5 oz fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley chopped (for garnish)

Cooking Steps

  • Heat olive oil in a large deep skillet or Dutch oven over medium-high heat.
  • Add ground turkey to the skillet and cook for 5-7 minutes until browned and cooked through, then drain any excess fat.
  • Stir in the diced red onion and minced garlic; cook for 3-4 minutes until the onion is soft and translucent.
  • Add chopped sun-dried tomatoes, dry orzo pasta, and dried oregano; cook for 1 minute, stirring to lightly toast the orzo.
  • Pour in the broth, bring to a simmer, then cover and cook on medium-low for 10-12 minutes, or until the orzo is al dente and liquid is absorbed, stirring occasionally.
  • Stir in the fresh spinach a handful at a time, allowing it to wilt before adding more, until fully incorporated.
  • Season the skillet with salt and pepper to taste.
  • Remove from heat and stir in the crumbled feta cheese.
  • Serve immediately, garnished with fresh chopped parsley.

Notes

For an extra touch of flavor, you can add a squeeze of lemon juice at the end. This dish is also great for meal prep; simply store leftovers in an airtight container in the refrigerator for up to 3 days.
