Ingredients
  

Fudge

  • 1 ½ cups creamy peanut butter
  • ½ cup unsalted butter softened
  • 4 cups powdered sugar
  • 2 tsp vanilla extract
  • ¼ cup milk dairy or non-dairy

Preparation

  • Line an 8x8 inch baking pan with parchment paper, allowing an overhang for easy removal.
  • In a large bowl, beat softened peanut butter and unsalted butter with an electric mixer until smooth.
  • Gradually add powdered sugar, one cup at a time, beating after each addition until incorporated and the mixture is thick.
  • Beat in vanilla extract, then slowly add milk one tablespoon at a time until the fudge is smooth, creamy, and firm.
  • Press the fudge mixture evenly into the prepared pan.
  • Cover and refrigerate for at least 2 hours, or until completely firm.
  • Lift the firm fudge from the pan using the parchment paper overhang, then cut into 1-inch squares and store leftovers in an airtight container in the refrigerator.

Notes

For best results, make sure your butter is truly softened to room temperature. You may not need all of the milk, so add it gradually until the desired consistency is reached. Store the fudge in an airtight container in the refrigerator for up to 1 week.
