  • 1 packet instant ramen noodles any flavor
  • 1/2 cup leftover cooked chicken shredded or diced
  • 1/4 cup frozen mixed vegetables
  • 1 large egg
  • few drops sesame oil
  • Pinch red pepper flakes optional
  • for garnish Fresh chives optional

Instructions
 

Preparation

  • Bring 2 cups of water to a boil in a small saucepan.
  • Add the instant ramen noodles (without the seasoning packet) to the boiling water and cook for 2 minutes.

Cooking

  • Stir in the frozen mixed vegetables and shredded chicken; continue to cook for 1-2 minutes until tender-crisp.
  • Crack the egg into the simmering broth and poach for 2-3 minutes until the white is set and yolk is runny.

Serving

  • Transfer everything to a serving bowl.
  • Stir in the ramen seasoning packet, sesame oil, and red pepper flakes if desired.
  • Garnish with chives and serve immediately.

Notes

This recipe is highly customizable; feel free to add other leftover proteins or vegetables. For a richer broth, you can use chicken or vegetable stock instead of water.
