One-Pan Chicken Caprese – Juicy Chicken, Bursting Tomatoes, and Melted Mozzarella

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch thick cutlets
  • 1 pint cherry or grape tomatoes
  • 8 oz fresh mozzarella ball cut into slices or pearls
  • fresh basil leaves roughly chopped or torn

Seasoning & Oil

  • 2 tbsp olive oil good quality extra virgin
  • 1 tsp garlic powder or 2-3 cloves fresh garlic, minced
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Optional Garnish

  • Balsamic glaze for serving

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • Pat the chicken breasts dry with paper towels; then, in a medium bowl, toss the chicken with 1 tablespoon of olive oil, garlic powder, oregano, 1/2 teaspoon salt, and 1/4 teaspoon black pepper until coated.
  • Place the seasoned chicken in a single layer on the baking sheet and scatter the cherry tomatoes around it, drizzling them with the remaining 1 tablespoon of olive oil, salt, and pepper.

Baking

  • Roast for 15-20 minutes, or until the chicken is almost cooked through (155°F/68°C) and the tomatoes begin to burst.
  • Remove the pan from the oven, arrange fresh mozzarella slices over the chicken, and scatter half of the fresh basil.
  • Return the pan to the oven for 5-8 minutes, or until the mozzarella is melted and bubbly and the chicken is fully cooked (165°F/74°C).

Serving

  • Carefully remove the pan from the oven, garnish with the remaining fresh basil and optional balsamic glaze, and serve immediately.

Notes

For extra flavor, marinate the chicken for at least 30 minutes before baking. You can also add a sprinkle of red pepper flakes for a little heat.
